The flavors of Notranjska are not only those that we encounter today on restaurant plates. Part of their story remains in local kitchens, recipes and knowledge that has been passed down through generations.

Kaura - a traditional kohlrabi stew

How to prepare kaura at home?

First, soak 400 g of beans.

Peel 1.5 kg of potatoes. It is recommended to use two types of potatoes - one that will slightly soften during cooking and thicken the dish, and the other that remains firm and is cut into cubes.

We also cut 1 kg of yellow kohlrabi into cubes, according to the local kaura.

Add the potatoes and kohlrabi to the beans and put everything on the stove.

Add salt and cook over medium heat for about two hours.

When the dish is cooked, melt the bacon fat and coat the kaura with it.

Cottage cheese "štruklji"

How to prepare cottage cheese štruklji at home?

Sift 50 dag of flour into a bowl and add a pinch of salt.

In another bowl, mix 3.5 dl of hot water, 1 small egg and 0.5 dl of oil.

While mixing, gradually pour the liquid ingredients into the flour.

Knead until you get a smooth and elastic dough.

In the meantime, prepare the filling.

Melt 12 dag of butter.

Mix 3 egg yolks into 1.5 kg of cottage cheese and salt or sweeten the filling to taste, depending on the type of štruklji.

Add the melted butter and mix well.

For a particularly smooth filling, you can use a hand blender.

Shape the dough into a loaf, coat it with oil and let it rest in the refrigerator for at least an hour, or overnight.

Roll out the rested dough thinly on a floured tablecloth and coat it evenly with the filling.

Then carefully roll it into a štrukelj.

Wrap the štrukelj tightly in foil and cook in salted boiling water for 40 to 45 minutes.

Fry the breadcrumbs in butter until golden.

Slice the cooked štrukelj and sprinkle it with the fried breadcrumbs.
